I think you might have that a little wrong.
えいご does mean English.
However, the common word for England or Britain is イギリス. For some reason it’s a weird exception to the language/country rule.
英 (えい) is used in words that have to do with Britain or English, but by itself, えい (no kanji) usually means stingray.
